Tasty Snacks to try on Your Vegan Journey

In my recent post, “Journey to Veganism,” I talked about how I was a pescatarian slowly transitioning into a vegetarian. Well, four months later I am officially vegetarian! It was more difficult than I believe it needed to be, which is partially due to my love for shrimp and salmon, and hesitancy to give them up. Additionally, I once ate a chicken sandwich at work because I was so hungry and forgot my lunch…it was not a great day. But anyway, that was a while ago! I want to say it has been about a month since I have had fish. I have mostly been looking at meals or recipes on TikTok for inspiration. Some delicious foods I’ve made include fried oyster mushrooms, roasted broccoli, baked lemon pepper tofu, and roasted cauliflower. I will post the recipes below as well as credit where I got some of them from. This post will be pretty lax and just an update on my journey with some recipes for those interested! I hope you Enjoy!

Recipes:

Roasted Broccoli:

What You’ll Need:

Broccoli (Bagged or Fresh)

Garlic powder

Salt and pepper

Nutritional yeast

Preheat oven to 400 degrees

Cut up your broccoli, put it in a bowl and pour a bit of olive oil on it enough to lightly cover all the pieces 

1 tsp Garlic powder

Salt and pepper to taste

Nutritional yeast for taste and crunch

Mix all ingredients to coat broccoli

Throw in oven for 20 minutes or until crispy enough

Roasted Cauliflower:

What You’ll Need: 

Cauliflower (Bagged or fresh)

Turmeric powder

Paprika

Garlic powder

Salt and pepper

Preheat oven to 425 degrees

Cut up cauliflower and pour olive oil to cover lightly

1/2 tsp Turmeric powder

1/2 tsp Paprika

1/2 tsp Garlic powder

Salt and pepper to taste

Mix all together to coat cauliflower evenly

Cook in oven for 30-40 minutes

Roasted Tofu:

What You’ll Need:

One container of tofu

Olive oil

Minced garlic

Red pepper flakes

Tapioca starch or all purpose flour)

Salt and pepper

Lemon pepper seasoning (optional)

Lemon 

Preheat oven to 400 degrees

Press tofu for about 20 minutes

Cut tofu up into cubes

Set tofu aside to make marinade

Marinade 

In a Tupperware container: 

2-3 tbs of Olive oil

1 tbs Minced garlic

½ tbs Red pepper flakes

2 tbs flour

Salt to taste

Pinch of pepper

Lemon pepper seasoning  (optional)

Put tofu inside of container and close

Shake until all tofu is covered by marinade

Add nutritional yeast for more flavor and crunch

Put in oven for 20 min (flip halfway through) 

Once removed from the oven lightly squeeze lemon juice on tofu and enjoy!

Tacos and Salad:

What You’ll Need:

Impossible vegan meat

Taco seasoning

Water

Cooking Spray or Oil

In a pan, spray cooking spray and add your “meat” to the pan

Add a little water to the pan as well as some taco seasoning

I add both mild and spicy seasoning

Let it cook (Add more water if necessary)

Once it’s finished cooking leave on low and add a pinch of Daiya vegan cheese

Once it’s melted, throw it in a taco shell

Add spinach, sour cream, and salsa, and enjoy!

Salad

Spring mix

Chickpeas

Tortilla strips or croutons

Purple onions

Tomatoes

Pepper

Nutritional yeast (cheese substitute)

Oil and vinegar dressing

Fried Oyster Mushrooms:

What You’ll Need:

1 container of Oyster mushrooms

1 egg

All Purpose flour (or alternative)

Vegetable Oil

Heat vegetable oil on medium heat in a pan

Rinse off oyster mushrooms and cut off stems

Dry them completely

Put flour and egg in separate bowls

I added salt, pepper, and garlic powder to my flour

Dip mushrooms ONE time in egg and ONE time in flour

Fry for about 2-3 minutes on each side or until golden brown

(because this is not raw meat it does not need to fry long)

Pair with ranch or your favorite sauce and enjoy!
